Ingredients (makes 4–6)

1 cup mozzarella cheese, shredded (full-fat)

1–2 tbsp psyllium husk powder (key for bread texture)

Pinch of salt

Butter or ghee (for cooking)
Instructions

Melt cheeses
Microwave mozzarella + cream cheese for ~30–45 sec until stretchy. -
Mix
Stir in egg, psyllium, baking powder, and salt.
Knead until it forms a soft dough. -
Rest
Let dough sit 5 minutes so psyllium thickens. -
Shape
Divide into balls. Roll flat between parchment paper (like naan). -
Cook
Heat pan on medium.
Cook each flatbread 2–3 minutes per side until golden spots form. -
Finish
Brush with melted butter or ghee. Optional garlic 😌
