Ingredients

  • 1 cup plain yogurt (room temperature)

  • 2 tsp instant coffee

  • 2 tbsp hot water

  • ¾ cup sugar (white or brown)

  • ½ cup oil (vegetable or sunflower)

  • 2 eggs

  • 1 tsp vanilla extract

  • 2 cups all-purpose flour

  • 2 tsp baking powder

  • ½ tsp baking soda

  • ¼ tsp salt

Optional Add-ins

  • Chocolate chips

  • Chopped walnuts

  • Cinnamon (½ tsp)


Instructions

  1. Preheat oven to 170°C / 340°F
    Grease and line a loaf pan or 8-inch round pan.

  2. Whisk coffee + yogurt
    Dissolve instant coffee in hot water. Let cool slightly, then whisk into yogurt until smooth.

  3. Add wet ingredients
    Whisk in sugar, oil, eggs, and vanilla until glossy.

  4. Add dry ingredients
    Sift in flour, baking powder, baking soda, and salt.
    Gently whisk just until combined (don’t overmix).

  5. Bake

    • Loaf pan: 45–50 minutes

    • Round pan: 35–40 minutes
      Toothpick should come out clean.

  6. Cool & serve
    Cool 10 minutes in pan, then transfer to a rack.


Optional Coffee Glaze (Highly Recommended 😍)

Mix:

  • ½ cup powdered sugar

  • 1 tsp instant coffee

  • 1–2 tbsp milk

Drizzle over cooled cake.


Tips for Best Results

  • Extra moist: use full-fat yogurt

  • Stronger coffee flavor: increase coffee to 3 tsp

  • Eggless version: replace eggs with ½ cup extra yogurt

  • Marble effect: reserve some plain batter and swirl
