🛒 Ingredients

The Star – Thick-Cut Steak

  • 2–3 large ribeyes or NY strips (1½–2 inches thick)

  • Kosher salt (generous)

  • Fresh cracked black pepper

  • 2 tablespoons neutral oil

  • 3 tablespoons butter

  • 4 cloves garlic, smashed

  • 2 sprigs rosemary or thyme


🧄 Garlic Herb Butter (Make Ahead)

  • ½ cup softened butter

  • 2 cloves garlic, minced

  • 1 tablespoon chopped parsley

  • 1 teaspoon chopped rosemary

  • ½ teaspoon salt

Mix and refrigerate.


🌿 Chimichurri

  • 1 cup parsley, finely chopped

  • 2 tablespoons oregano

  • 3 cloves garlic

1️⃣ Slow Roast

  • Preheat oven to 275°F (135°C).

  • Salt steaks generously at least 1 hour before cooking.

  • Place on rack over baking sheet.

  • Roast until internal temp hits:

    • 120°F for medium-rare

    • 125°F for medium

(Usually 30–45 minutes depending on thickness.)


2️⃣ Rest Briefly

Let rest 10 minutes while heating skillet.


3️⃣ Hard Sear

  • Heat cast iron until smoking hot.

  • Add oil.

  • Sear steak 60–90 seconds per side.

  • Add butter, garlic, herbs.

  • Baste continuously.

Finish at:

  • 130–135°F = perfect medium-rare.


🔥 Feast Plating

  1. Slice steak against the grain.

  2. Add a thick slice of garlic herb butter on top.

  3. Spoon chimichurri over some slices.

  4. Serve with crispy potatoes and asparagus.
