Ingredients

  • 3 cups all-purpose flour

  • 1½ tsp salt

  • ¼ tsp instant or active dry yeast (yes, that little!)

  • 1½ cups warm water

That’s it. No sugar. No oil. No milk.


Instructions

  1. Mix

    • Stir everything together until you get a sticky, shaggy dough.

    • No kneading. Just mix until combined.

  2. Rise

    • Cover loosely.

    • Let sit 12–18 hours at room temperature.

    • Dough should be bubbly and doubled.

  3. Shape

    • Turn dough onto a floured surface.

    • Fold it over itself a couple times.

    • Shape into a rough ball.

    • Let rest 30–60 minutes.

  4. Bake

    • Preheat oven to 450°F (230°C).

    • Put a covered Dutch oven (or heavy pot with lid) inside to heat.

    • Drop dough into hot pot.

    • Bake 30 minutes covered, then 10–15 minutes uncovered until deep golden.

  5. Cool

    • Let cool at least 20 minutes before slicing (important for crumb).


Why This Works

  • Long rise = flavor + structure

  • Steam trapped in the pot = crunchy crust

  • Minimal yeast = dirt cheap
