🥩 Tender Slow-Cooked Beef Roast with Gravy

Ingredients

  • 1–1.5 kg (2–3 lb) beef chuck roast or rump roast

  • 2 tbsp oil

  • 1 onion — sliced

  • 4 garlic cloves — minced

  • 2 cups beef broth

  • 2 tbsp soy sauce or Worcestershire sauce

  • 1 tbsp tomato paste

  • 1 tsp black pepper

  • 1½ tsp salt

  • 1 tsp paprika

  • 1 tsp dried thyme or rosemary

  • 1 tbsp butter (optional for rich gravy)

  • 2 tbsp flour or cornstarch (for thickening)

1️⃣ Sear the Beef

  1. Heat oil in heavy pot or pan.

  2. Season beef with salt & pepper.

  3. Sear all sides until browned (3–4 minutes each side).

2️⃣ Build the Sauce

  1. Remove beef → cook onion & garlic in same pot.

  2. Add tomato paste, paprika, thyme.

  3. Pour in beef broth & soy/Worcestershire — scrape browned bits.

3️⃣ Slow Cook

  • Return beef to pot, cover, and cook on low heat 2½–3 hours
    OR bake covered at 160°C (325°F) until fork-tender.

4️⃣ Make Gravy

  1. Remove beef and slice.

  2. Mix flour/cornstarch with water → stir into sauce.

  3. Simmer until thick, add butter for glossy finish.

  • Add carrots & potatoes for full roast dinner.

  • Pressure cooker: about 60–70 minutes.
