Tender Beef with Rice & Sweet Peppers

Ingredients

Beef

  • 1½ lb beef chuck, sirloin, or stew beef (cut into bite-size pieces)

  • 1 tsp salt

  • ½ tsp black pepper

  • 1 tsp paprika

  • 1 tsp garlic powder

  • 2 tbsp oil

Sauce & Veg

  • 1 large onion, sliced

  • 3–4 sweet bell peppers (red, yellow, orange), sliced

  • 3 cloves garlic, minced

  • 1 tbsp tomato paste

  • 1 cup beef broth

  • 1 tbsp soy sauce or Worcestershire sauce

  • 1 tsp dried thyme or Italian seasoning

Rice

  • 1½ cups long-grain rice

  • 3 cups water or broth

  • 1 tbsp butter

  • Salt to taste


Instructions

1. Make the rice

Cook rice with water/broth, butter, and salt. Fluff and set aside.


2. Brown the beef

  • Season beef with salt, pepper, paprika, and garlic powder.

  • Heat oil in a deep skillet or pot.

  • Brown beef in batches until nicely colored. Remove and set aside.


3. Build the flavor

  • In the same pan, sauté onions 3–4 minutes.

  • Add sweet peppers and cook until softened.

  • Stir in garlic and tomato paste; cook 1 minute.


4. Make it tender

  • Return beef to the pan.

  • Add beef broth, soy/Worcestershire, and thyme.

  • Bring to a simmer, cover, and cook on low heat for 45–60 minutes, until beef is tender.
    (Add a splash of broth if needed.)


5. Serve

Spoon tender beef and sweet peppers over warm rice. Drizzle extra sauce on top 🤎
