🧾 Ingredients

  • 2 cups fresh or frozen blueberries (or mixed berries)
  • 1/2 cup apple cider vinegar
  • 1/4 cup water
  • 1/3–1/2 cup honey (adjust to taste)
  • 1–2 tbsp sugar (optional, for extra sweetness)
  • 1 tsp salt
  • 1–2 cloves garlic, minced
  • 1 tsp red pepper flakes (adjust for heat)
  • 1 tsp mustard seeds
  • 1/2 tsp black pepper
  • 1–2 tbsp fresh herbs (like chopped basil, mint, or cilantro)

👩‍🍳 Instructions

  1. Make the brine
    In a saucepan, combine vinegar, water, honey, sugar (if using), salt, garlic, red pepper flakes, mustard seeds, and black pepper.
    Bring to a gentle simmer over medium heat.
  2. Add berries
    Stir in the blueberries and let them simmer for 3–5 minutes, just until they begin to soften but not burst completely.
  3. Cool & flavor
    Remove from heat and stir in fresh herbs.
  4. Jar it up
    Pour everything into a clean glass jar. Let it cool to room temperature.
  5. Chill
    Refrigerate for at least 12–24 hours before eating (flavor improves over time).
