Ingredients

Cookies

  • 1/2 cup unsalted butter, softened

  • 1 cup sugar

  • 1 large egg

  • 1 tbsp lemon zest

  • 2 tbsp fresh lemon juice

  • 1 tsp vanilla extract

  • 1 1/2 cups all-purpose flour

  • 1/2 tsp baking powder

  • 1/4 tsp baking soda

  • 1/4 tsp salt

Lemon Glaze

  • 1 cup powdered sugar

  • 2–3 tbsp fresh lemon juice

  • Extra powdered sugar (for dusting, optional)


Instructions

  1. Prep

    • Preheat oven to 175°C / 350°F

    • Line baking tray with parchment paper

  2. Make cookie dough

    • Cream butter and sugar until light and fluffy

    • Beat in egg, lemon zest, lemon juice, and vanilla

    • In another bowl, whisk flour, baking powder, baking soda, and salt

    • Mix dry ingredients into wet just until combined

  3. Bake

    • Scoop dough (1½ tbsp each) onto tray

    • Leave space — they spread slightly

    • Bake 10–12 minutes until bottoms are lightly golden

    • Cool completely before glazing

  4. Glaze

    • Mix powdered sugar with lemon juice until thick but pourable

    • Spoon glaze onto cookies

    • Let set 15–20 minutes

  5. Finish

    • Dust lightly with powdered sugar if you want that bakery look ✨
