📝 Ingredients
- 5 medium potatoes (Yukon Gold or Russet), thinly sliced (about ¼ inch)
- 1 large onion, thinly sliced
- 3 tbsp unsalted butter, melted
- 2 tbsp olive oil
- 3 cloves garlic, minced (or 1 tsp garlic powder)
- 1 tsp paprika
- 1 tsp salt (adjust to taste)
- ½ tsp black pepper
- ½ tsp dried thyme or Italian seasoning (optional)
- 2 tbsp chopped fresh parsley (for garnish, optional)

1. Prep ingredients
- Wash and slice potatoes evenly so they cook at the same rate.
- Slice onions into thin strips.
2. Layer in slow cooker
- Lightly grease the slow cooker.
- Add a layer of potatoes, then onions.
- Repeat layers until everything is used.
3. Season
- In a small bowl, mix melted butter, olive oil, garlic, paprika, salt, pepper, and herbs.
- Pour evenly over the potatoes and onions.
- Gently toss or press down to coat everything.
4. Cook
- Cover and cook:
- LOW: 5–6 hours
- HIGH: 3–4 hours
- Stir once or twice if possible for even cooking.
5. Finish & serve
- Potatoes should be fork-tender.
