slow cooker pepper steak — tender beef strips with colorful bell peppers in a savory sauce. Here’s a simple, flavorful version you can make:

🥩 Slow Cooker Pepper Steak

Ingredients

  • 1½–2 lbs beef sirloin or flank steak, sliced into thin strips

  • 3 bell peppers (red, yellow, green), sliced

  • 1 medium onion, sliced (optional)

  • 3 cloves garlic, minced

  • ¾ cup beef broth

  • ¼ cup soy sauce

  • 1 tablespoon Worcestershire sauce

  • 1 tablespoon cornstarch

  • 1 tablespoon brown sugar (optional)

  • ½ teaspoon black pepper

  • ½ teaspoon salt (adjust to taste)

  • ½ teaspoon ginger (optional)

Instructions

  1. Layer ingredients
Place sliced beef in the bottom of the slow cooker. Add peppers and onions on top.

  2. Mix sauce
In a bowl, whisk together beef broth, soy sauce, Worcestershire, garlic, brown sugar, pepper, salt, and ginger.

  3. Pour & cook
    Pour sauce over everything.

    • Cook on LOW for 6–7 hours

    • Or HIGH for 3–4 hours

  4. Thicken
Mix cornstarch with 2 tablespoons cold water. Stir into the slow cooker during the last 20–30 minutes to thicken the sauce.

  5. Serve
Serve over rice, noodles, or mashed potatoes.

Tips

  • For extra flavor, sear the beef in a skillet before adding it to the slow cooker.

  • Add sliced mushrooms if you like.

  • Want heat? Add red pepper flakes or sliced jalapeño.

If you’d like, I can also give you a stovetop (30-minute) version 😊
