🥩 Slow Cooker Ground Beef Stew

Ingredients (Serves 6)

  • 1½ lbs ground beef

  • 4 medium potatoes, peeled & cubed

  • 3 carrots, sliced into chunks

  • 1 small onion, diced

  • 3 cloves garlic, minced

  • 1 (15 oz) can diced tomatoes

  • 1 (15 oz) can tomato sauce

  • 1½ cups beef broth

  • 1 tbsp tomato paste (optional, for richness)

  • 1 tsp Italian seasoning

  • 1 tsp paprika

  • ½ tsp dried thyme

  • Salt & black pepper to taste

  • 1 tbsp Worcestershire sauce

  • 1 tbsp olive oil


Instructions

1️⃣ Brown the Beef

  1. Heat olive oil in a skillet over medium heat.

  2. Add ground beef and cook until browned.

  3. Drain excess grease.

  4. Stir in onion and garlic; cook 2–3 minutes until fragrant.


2️⃣ Add to Slow Cooker

  1. Transfer beef mixture to slow cooker.

  2. Add potatoes, carrots, diced tomatoes, tomato sauce, broth, and tomato paste.

  3. Stir in Worcestershire, seasonings, salt, and pepper.


3️⃣ Cook

  • Low: 6–8 hours

  • High: 3–4 hours

Potatoes should be fork-tender and stew thickened.


Optional Thickening (If Needed)

Mix 1 tbsp cornstarch with 2 tbsp cold water and stir in during last 30 minutes.
