ΒΌ cup brown sugar

Step 1: Prepare

Preheat oven to 180Β°C (350Β°F).

Line baking sheet with parchment paper.

Pat pineapple slices very dry (important!).
Step 2: Make Cookie Dough

Cream butter and sugar until light and fluffy.

Add egg and vanilla, mix well.

In another bowl, combine flour, baking powder, and salt.

Gradually mix dry ingredients into wet until dough forms.
Step 3: Assemble

Mix melted butter and brown sugar.

Place small spoonful of brown sugar mixture on parchment (like mini circles).

Sprinkle coconut on top.
