Oven-Baked Brats & Onions
Ingredients
-
Bratwurst (raw)
-
2–3 large onions, sliced
-
2–3 tbsp olive oil or melted butter
-
Salt & black pepper
-
Optional (highly recommended):
-
½–1 cup beer or broth
-
1 tsp garlic powder
-
1 tsp smoked paprika
-
Instructions
-
Preheat oven to 400°F (205°C)
Line a sheet pan with foil (trust me on cleanup). -
Prep the onions
Toss sliced onions with oil/butter, salt, pepper, and any spices. Spread them out on the pan. -
Add brats
Nestle brats on top of the onions.
Pour beer or broth into the pan (not over the brats—just around them). -
Bake
-
Bake uncovered for 20 minutes
-
Flip brats and stir onions
-
Bake another 15–20 minutes until browned and cooked through
(Internal temp: 160°F / 71°C)
-
-
Optional extra browning
-
Broil for 2–3 minutes at the end if you want darker skins like in the pic.
-
Serve with
-
Toasted buns + mustard
-
Sauerkraut
-
Or just pile the onions right on top 😌
Pro tips
-
Don’t poke the brats — keeps them juicy.
-
If onions start drying out, splash in a bit more beer.
-
Works great with Italian sausage too.
