Oven-Baked Brats & Onions

Ingredients

  • Bratwurst (raw)

  • 2–3 large onions, sliced

  • 2–3 tbsp olive oil or melted butter

  • Salt & black pepper

  • Optional (highly recommended):

    • ½–1 cup beer or broth

    • 1 tsp garlic powder

    • 1 tsp smoked paprika


Instructions

  1. Preheat oven to 400°F (205°C)
    Line a sheet pan with foil (trust me on cleanup).

  2. Prep the onions
    Toss sliced onions with oil/butter, salt, pepper, and any spices. Spread them out on the pan.

  3. Add brats
    Nestle brats on top of the onions.
    Pour beer or broth into the pan (not over the brats—just around them).

  4. Bake

    • Bake uncovered for 20 minutes

    • Flip brats and stir onions

    • Bake another 15–20 minutes until browned and cooked through
      (Internal temp: 160°F / 71°C)

  5. Optional extra browning

    • Broil for 2–3 minutes at the end if you want darker skins like in the pic.


Serve with

  • Toasted buns + mustard

  • Sauerkraut

  • Or just pile the onions right on top 😌

Pro tips

  • Don’t poke the brats — keeps them juicy.

  • If onions start drying out, splash in a bit more beer.

  • Works great with Italian sausage too.
