Ingredients

  • ½ cup (1 stick) unsalted butter, softened

  • ½ cup granulated sugar

  • ½ cup packed brown sugar

  • 1 large egg

  • 1 teaspoon vanilla extract

  • 1 cup mashed ripe banana (about 2–3 very ripe bananas)

  • 2 cups all-purpose flour

  • 1 teaspoon baking soda

  • ½ teaspoon salt

  • ½ teaspoon ground cinnamon (optional)

  • 1 cup chopped walnuts or pecans


Instructions

  1. Preheat oven to 350°F (175°C).
    Line baking sheets with parchment paper.

  2. Cream butter & sugars
    Beat butter, granulated sugar, and brown sugar until light and fluffy.

  3. Add wet ingredients
    Mix in egg and vanilla. Stir in mashed bananas.

  4. Combine dry ingredients
    In a separate bowl, whisk flour, baking soda, salt, and cinnamon.

  5. Mix together
    Gradually add dry ingredients to wet mixture. Stir just until combined.
    Fold in chopped nuts.

  6. Scoop dough
    Drop by rounded tablespoons onto baking sheet (they spread slightly).

  7. Bake
    Bake 10–12 minutes until edges are lightly golden.

  8. Cool
    Let cool 5 minutes on pan, then transfer to a rack.


Texture Tip

These are soft and slightly cakey.
If you want them:

  • Chewier → reduce banana to ¾ cup and add ½ cup oats

  • Sweeter bakery-style → add ½ cup white chocolate chips
