A naturally sweet, wholesome cake made with oats instead of flour. Perfect for breakfast, snack, or light dessert.

🥣 Ingredients

Dry Ingredients

  • 2 cups rolled oats (or quick oats)

  • 1½ tsp baking powder

  • ½ tsp baking soda

  • 1 tsp cinnamon

  • ¼ tsp salt

Wet Ingredients

  • 2 large eggs

  • ½ cup milk (dairy or plant-based)

  • ⅓ cup honey or maple syrup

  • ¼ cup melted coconut oil or any neutral oil

  • 1 tsp vanilla extract

Add-ins

  • 2 medium apples (peeled & diced small)

  • Optional: ¼ cup chopped walnuts or raisins

👩‍🍳 Instructions

  1. Preheat oven to 350°F (175°C).
Grease or line an 8-inch (20 cm) baking pan.

  2. Blend the oats
Place oats in a blender or food processor and blend into a fine flour-like texture.

  3. Mix dry ingredients
In a bowl, combine oat flour, baking powder, baking soda, cinnamon, and salt.

  4. Mix wet ingredients
In another bowl, whisk eggs, milk, honey, oil, and vanilla.

  5. Combine
Pour wet mixture into dry mixture. Stir until combined.
Fold in diced apples (and nuts/raisins if using).

  6. Bake
Pour batter into the prepared pan.
Bake 30–40 minutes, or until a toothpick inserted in the center comes out clean.

  7. Cool & Serve
Let cool for 10–15 minutes before slicing.

🍯 Optional Toppings

  • Dust with powdered sugar

  • Drizzle with honey

  • Serve with Greek yogurt

  • Add a light cream cheese glaze

💡 Tips

  • For extra moisture, grate one apple instead of dicing both.

  • Make it vegan: replace eggs with 2 flax eggs (2 tbsp flaxseed + 6 tbsp water).

  • Add 1 mashed banana for natural sweetness.

  • Store in fridge up to 4 days or freeze slices for up to 2 months.
