New Mexico Green Chile Bisquick Quiche
Ingredients

1 cup roasted New Mexico green chile, peeled, chopped, and drained
(Hatch preferred, hot or mild—your call) -
1 cup shredded cheese
(Cheddar, Monterey Jack, or a Cheddar-Jack blend) -
4 large eggs

½ cup Bisquick

½ tsp salt

¼ tsp black pepper

¼ tsp garlic powder (optional, but nice)

Butter or spray for greasing the dish

½ cup cooked crumbled bacon or chorizo

¼ cup finely chopped onion

Instructions

Preheat oven to 375°F (190°C). Grease a 9-inch pie dish or quiche pan.

Layer the good stuff: Spread green chile evenly in the dish. Sprinkle cheese (and any add-ins) over the top.

Mix: In a bowl, whisk eggs, milk, Bisquick, salt, pepper, and garlic powder until smooth.

Pour the egg mixture over the chile and cheese.

Bake uncovered for 35–45 minutes, until puffed, golden, and a knife in the center comes out clean.

Rest 5–10 minutes before slicing (it sets up and cuts cleaner).
