🥗 Mediterranean Celery Olive Salad

Ingredients

  • 3 cups celery — thinly sliced

  • 1/2 cup green or Kalamata olives — sliced

  • 1/4 small red onion — thinly sliced

  • 1/4 cup fresh parsley — chopped

  • 2 tbsp fresh mint or coriander (optional)

  • 1/4 cup cherry tomatoes — halved (optional)

Dressing

  • 3 tbsp extra virgin olive oil

  • 1–2 tbsp lemon juice or red wine vinegar

  • 1 small garlic clove — minced

  • 1/4 tsp black pepper

  • Pinch salt (olives are already salty)

  • 1/2 tsp dried oregano


Instructions

  1. Add celery, olives, onion, parsley, and tomatoes to a bowl.

  2. In a small bowl, whisk olive oil, lemon juice, garlic, pepper, oregano, and salt.

  3. Pour dressing over salad and toss well.

  4. Let sit 10–15 minutes before serving so flavors blend.
