🧾 Ingredients

For the base:

  • 1 lb ground beef
  • 1 packet taco seasoning
  • ½ cup water
  • 1 cup corn (canned or frozen)
  • 1 can Rotel (diced tomatoes with green chilies, drained)

For the cheese layer:

  • 8 oz cream cheese (softened)
  • 1 cup sour cream
  • 2 cups shredded cheese (cheddar or Mexican blend)

Toppings:

  • 1 cup diced tomatoes
  • ½ cup chopped green onions or jalapeños
  • Fresh cilantro (optional)
  • Extra sour cream (for topping)

For serving:

  • Tortilla chips

👨‍🍳 Instructions

1. Cook the beef

  1. In a skillet, cook ground beef over medium heat until browned.
  2. Drain excess grease.
  3. Add taco seasoning and water, simmer for 3–5 minutes.

2. Make the creamy mixture

  1. In a bowl, mix cream cheese, sour cream, and 1½ cups shredded cheese.
  2. Stir until smooth and well combined.

3. Combine

  1. Add cooked beef, corn, and Rotel into the cheese mixture.
  2. Mix everything together evenly.

4. Bake

  1. Preheat oven to 375°F (190°C).
  2. Transfer mixture to a baking dish.
