Ingredients

  • 1 box (3.4 oz / 100 g) instant lemon pudding mix

  • 1 cup cold milk

  • 1 tub (8 oz / 225 g) whipped topping, thawed

  • 1 cup mini marshmallows

Optional add-ins (but very popular):

  • ½ cup crushed pineapple, well drained

  • 1 tsp lemon zest (extra zing)

  • Graham cracker crumbs or vanilla wafers for serving

Instructions

  1. In a bowl, whisk the lemon pudding mix and cold milk for about 2 minutes, until thick.

  2. Gently fold in the whipped topping until smooth and fluffy.

  3. Fold in the mini marshmallows (and pineapple or zest if using).

  4. Chill for 30–60 minutes before serving.

Serving Ideas

  • Spoon into dessert cups

  • Layer with graham cracker crumbs for a parfait

  • Use as a filling for a no-bake pie crust

Tips

  • For extra lemon flavor, add 1–2 teaspoons fresh lemon juice.

  • For a creamier version, fold in ¼–½ cup softened cream cheese.

  • Keeps well in the fridge for up to 2 days.
