Honey Garlic Potatoes (Slow Cooker / Crockpot)
Ingredients

1 kg baby potatoes or regular potatoes (cubed, skin on)

¼ cup honey
-
3–4 tbsp melted butter or olive oil

4–5 garlic cloves (minced)

1 tsp salt
-
½ tsp black pepper
-
½ tsp chilli flakes (optional)
-
½ tsp dried thyme or oregano (optional)
-
1 tbsp soy sauce (optional, adds depth)

Fresh parsley (for garnish)
Method
1️⃣ Prep potatoes

Wash well and cut into equal-sized cubes.

No need to boil.
2️⃣ Make honey garlic sauce

Mix honey, melted butter/oil, garlic, salt, pepper, chilli flakes, herbs, and soy sauce (if using).
3️⃣ Slow cook

Add potatoes to slow cooker.

Pour sauce over and toss to coat.

Cover and cook:

Low: 5–6 hours
-
High: 2½–3 hours
-

Stir once halfway if possible.
4️⃣ Finish

Taste and adjust salt.

Garnish with parsley.

After slow cooking, spread potatoes on a tray.

Broil / air-fry at 200°C (400°F) for 8–10 minutes until edges are golden.
Variations

Cheesy: sprinkle parmesan before serving

Spicy: add 1 tsp hot sauce

Vegan: use olive oil instead of butter
