  • 6 cups vegetable broth

  • 1 teaspoon dried thyme

  • 1 teaspoon dried oregano

  • 1/2 teaspoon black pepper

  • 1 teaspoon salt (adjust to taste)

  • Fresh parsley for garnish

Instructions

  1. Sauté the base:
    Heat olive oil in a large pot over medium heat. Add onion and cook 3–4 minutes until soft. Stir in garlic and cook 30 seconds.

  2. Add vegetables:
    Add carrots, celery, and potatoes. Stir and cook for 5 minutes.

  3. Add liquids & seasoning:
    Pour in vegetable broth and diced tomatoes. Add thyme, oregano, salt, and pepper. Bring to a boil.
