Ingredients

  • 2–3 medium russet or Yukon Gold potatoes

  • 1½–2 tbsp olive oil

  • ½ tsp salt

  • ½ tsp black pepper

  • ½ tsp paprika (optional but recommended)

  • ½ tsp Italian seasoning or dried oregano

  • 2–3 cloves garlic, minced (or 1 tsp garlic powder)

  • ⅓ cup grated Parmesan (freshly grated = best crisp)

  • Optional garnish: fresh parsley, extra Parmesan, red pepper flakes

Instructions

  1. Prep the potatoes
    Wash and slice potatoes into ¼-inch thick rounds. Try to keep them even so they cook uniformly.

  2. Season
    In a bowl, toss potato rounds with olive oil, salt, pepper, paprika, Italian seasoning, and garlic until well coated.

  3. Air fry – first round
    Preheat air fryer to 400°F (200°C).
    Arrange potatoes in a single layer (work in batches if needed).
    Air fry for 10 minutes, then flip.

  4. Add the Parmesan magic
    Sprinkle Parmesan evenly over the potatoes.
    Air fry for another 6–8 minutes, until golden, crispy on the edges, and tender inside.

  5. Finish & serve
    Taste and adjust seasoning. Garnish with parsley or extra cheese if you’re feeling fancy.

  • Want them extra crispy? Soak sliced potatoes in cold water for 20–30 minutes, then dry really well before seasoning.
