Garlic Butter Mashed Potatoes with Steak & Fresh Vegetables
🥩 Ingredients
For the Garlic Butter Mashed Potatoes:

3 pounds russet or Yukon Gold potatoes, peeled and cubed

For the Steak:

2 ribeye or filet mignon steaks (1–1½ inches thick)

For the Vegetables:

1 bunch asparagus, trimmed

👩🍳 Instructions
1️⃣ Make the Garlic Butter Mashed Potatoes

Place potatoes in a large pot and cover with cold salted water.

Bring to a boil and cook 15–20 minutes, until fork-tender.

While potatoes cook, melt butter in a small pan over medium heat. Add minced garlic and sauté 1–2 minutes until fragrant (don’t brown).

Drain potatoes and return to the pot. Mash until smooth.

Stir in garlic butter and warm milk/cream until creamy.

Season with salt and pepper. Add sour cream if desired. Keep warm.
2️⃣ Cook the Steak

Remove steak from fridge 30 minutes before cooking. Pat dry and season generously with salt and pepper.

Heat a skillet (preferably cast iron) over high heat. Add olive oil.

3️⃣ Roast or Sauté the Vegetables
Roast method:

Roast at 400°F (200°C) for 15–20 minutes.
OR sauté method:

Cook in a skillet over medium-high heat for 8–10 minutes until tender-crisp.
