🥥 Coconut Cake (Moist & Fluffy)

Ingredients

For the cake:

  • 2½ cups all-purpose flour

  • 2½ tsp baking powder

  • ½ tsp salt

  • ¾ cup unsalted butter (softened)

  • 1¾ cups sugar

  • 4 eggs

  • 1 tsp vanilla extract

  • 1 tsp coconut extract (optional)

  • 1 cup coconut milk

  • ½ cup shredded coconut

For the frosting:

  • 1 cup butter (softened)

  • 4 cups powdered sugar

  • 2–3 tbsp coconut milk

  • 1 tsp vanilla

  • 1½ cups shredded coconut (for coating)

Instructions

  1. Preheat oven to 350°F (175°C). Grease two 9-inch pans.

  2. Mix flour, baking powder, and salt.

  3. Cream butter and sugar until fluffy. Add eggs one at a time.

  4. Mix in extracts. Alternate adding dry ingredients and coconut milk.

  5. Fold in shredded coconut.

  6. Bake 25–30 minutes. Cool completely.

  7. Beat frosting ingredients until smooth. Frost cake and cover with shredded coconut.


🍫 Chocolate Wafer Rolls

Ingredients

  • 1 cup flour

  • ¼ cup cocoa powder

  • ¾ cup powdered sugar

  • 2 egg whites

  • ¼ cup melted butter

  • 1 tsp vanilla

  • Pinch salt

Instructions

  1. Preheat oven to 375°F (190°C). Line baking sheet with parchment.

  2. Mix all ingredients into smooth batter.

  3. Spread thin circles (about 4 inches).

  4. Bake 5–7 minutes until edges brown.

  5. Quickly roll around a wooden spoon handle while warm.

  6. Cool to harden.

🍓 Cheesecake Platter

Ingredients

Crust:

  • 1½ cups crushed graham crackers

  • ¼ cup sugar

  • ½ cup melted butter

Filling:

  • 3 blocks (8 oz each) cream cheese (softened)

  • 1 cup sugar

  • 3 eggs

  • 1 tsp vanilla

  • ½ cup sour cream

Topping:

  • Fresh strawberries, blueberries, raspberries

  • Fruit sauce (optional)

Instructions

  1. Preheat oven to 325°F (160°C).

  2. Mix crust ingredients and press into pan. Bake 10 minutes.

  3. Beat cream cheese and sugar smooth. Add eggs one at a time.

  4. Mix in vanilla and sour cream.

  5. Pour over crust. Bake 50–60 minutes.

  6. Cool, then refrigerate at least 4 hours.

  7. Slice and top with berries and sauce.

Ingredients

  • 1 cup water

  • 2½ tbsp sugar

  • ½ tsp salt

  • 2 tbsp butter

  • 1 cup flour

  • 1 egg

  • Oil for frying

Coating:

  • ½ cup sugar

  • 1 tsp cinnamon

Instructions

  1. Heat water, sugar, salt, and butter until boiling.

  2. Remove from heat, stir in flour until dough forms.

  3. Cool slightly, mix in egg.

  4. Pipe small pieces into hot oil (350°F / 175°C).

  5. Fry until golden brown.

  6. Roll in cinnamon sugar.

  7. Serve with chocolate dipping sauce.
