Flourless Cottage Cheese Pancakes
Ingredients

1 cup cottage cheese (paneer), crumbled or blended

2 eggs

1 tbsp sugar or honey (optional)

½ tsp vanilla essence (optional)

Pinch of salt

Butter or oil for cooking
Method
1️⃣ Prepare batter

Blend cottage cheese until smooth (or mash very finely).

Add eggs, sugar/honey, vanilla, salt.

Mix well → batter should be thick but pourable.
2️⃣ Cook pancakes

Heat non-stick pan on low–medium heat.

Lightly grease with butter.

Pour small ladles of batter.
3️⃣ Flip carefully

Cook 2–3 minutes until edges set and bottom is golden.

Flip gently and cook another 1–2 minutes.
4️⃣ Serve hot
