🌭 Grilled Sausages

Ingredients

  • 4 fresh sausages (pork, beef, or chicken)

  • 1 tbsp olive oil

  • 1 tsp Dijon mustard (optional)

  • 1 tsp chopped fresh herbs (parsley or thyme)

  • Freshly ground black pepper

Instructions

  1. Preheat grill to medium heat (about 375–400°F / 190–200°C).

  2. Lightly brush sausages with olive oil and prick once or twice (optional).

  3. Grill for 12–15 minutes, turning every few minutes, until evenly browned and cooked through (internal temp 160°F / 71°C for pork/beef).

  4. Brush with a little Dijon in the last 2 minutes if desired.

  5. Rest 5 minutes, sprinkle with herbs and pepper, and serve.


🐟 Grilled Sardines

Ingredients

  • 8–10 fresh sardines, cleaned

  • 2 tbsp olive oil

  • 2 cloves garlic, minced

  • Zest + juice of 1 lemon

  • 1 tbsp chopped parsley

  • Salt & pepper

Instructions

  1. Preheat grill to medium-high.

  2. Mix olive oil, garlic, lemon zest, salt, and pepper.

  3. Brush sardines inside and out.

  4. Grill 2–3 minutes per side (they cook fast!).

  5. Finish with lemon juice and parsley. Serve with extra lemon wedges.


🍗 Grilled Chicken Breasts

Ingredients

  • 4 boneless, skinless chicken breasts

  • 3 tbsp olive oil

  • 2 tbsp lemon juice

  • 2 cloves garlic, minced

  • 1 tsp paprika

  • 1 tsp dried oregano

  • Salt & pepper

Instructions

  1. Pound chicken to even thickness.

  2. Marinate in all ingredients for 30 minutes–4 hours.

  3. Grill over medium heat 6–7 minutes per side, until internal temp reaches 165°F (74°C).

  4. Rest 5 minutes before slicing.


🐟 Grilled Salmon

Ingredients

  • 4 salmon fillets (skin on)

  • 2 tbsp olive oil

  • 1 tbsp lemon juice

  • 1 tsp Dijon mustard (optional)

  • 1 tsp honey (optional)

  • Salt & pepper

  • Fresh herbs (parsley or dill)

Instructions

  1. Preheat grill to medium.

  2. Mix olive oil, lemon juice, Dijon, honey, salt, and pepper.

  3. Brush over salmon.

  4. Grill skin-side down 4–6 minutes, flip carefully and cook another 2–4 minutes (internal temp 125–130°F / 52–54°C for medium).

  5. Garnish with herbs and serve with lemon slices.
