Crockpot Cowboy Soup (hearty & thick)
Ingredients

1 lb ground beef (or ground turkey)

1 small onion, diced

2 cloves garlic, minced

3 cups beef broth
-
1 can diced tomatoes (14–15 oz)

1 can corn, drained
-
1 can pinto beans, drained & rinsed
-
1 can kidney beans, drained & rinsed
-
1 cup potatoes, diced (or frozen diced hash browns)
-
1 cup carrots, diced
-
1 tbsp tomato paste (optional but recommended)
-
1½ tsp chili powder
-
1 tsp cumin
-
1 tsp paprika
-
½ tsp salt
-
½ tsp black pepper
-
Optional heat: pinch of cayenne or diced jalapeño
Instructions

Brown the beef
In a skillet, cook ground beef with onion until browned. Drain excess grease. Add garlic and cook 30 seconds. -
Load the crockpot
Add beef mixture and all remaining ingredients to the slow cooker. Stir well. -
Cook

LOW: 6–8 hours

HIGH: 3–4 hours
Until potatoes and carrots are tender.

Finish
Taste and adjust seasoning. Let sit 10 minutes to thicken before serving.

Stir in ½ cup shredded cheddar before serving

Top with crushed tortilla chips, sour cream, or green onions
