🧀 Crispy Zucchini Garlic Bites
Makes about 12–14 bites
Ingredients

2 medium zucchini, grated

½ tsp salt (for draining)

1 cup shredded mozzarella

¼ cup grated parmesan
-
1 egg
-
½ cup breadcrumbs (panko for extra crisp)

2 cloves garlic, minced
-
2 tbsp chopped fresh parsley
-
¼ tsp black pepper
-
½ tsp Italian seasoning
Instructions
1️⃣ Prep the Zucchini (Very Important)

Grate zucchini and sprinkle with salt.

Let sit 10 minutes.

Squeeze out as much liquid as possible using a clean towel.
(This keeps them crispy, not soggy.)
2️⃣ Mix
In a bowl combine:

Drained zucchini
-
Mozzarella
-
Parmesan
-
Egg
-
Breadcrumbs
-
Garlic
-
Parsley & seasonings
Mix until it holds together.
3️⃣ Shape
Roll into golf-ball sized bites and place on lined baking sheet.
4️⃣ Bake

Brush or spray lightly with oil.

Bake at 400°F (200°C) for 18–22 minutes.

Broil last 2–3 minutes for extra golden tops.
🥣 Creamy Garlic Herb Dip
Mix together:

½ cup Greek yogurt or sour cream

1 tbsp mayo (optional)

1 tbsp lemon juice
-
1 tbsp chopped parsley
-
½ tsp garlic powder
-
Salt & pepper to taste
Chill 15 minutes before serving.

Pan-sear in a little olive oil 2–3 minutes per side instead of baking.
