2 medium potatoes โ boiled & mashed

1 small zucchini โ grated & squeezed dry

1 small carrot โ grated

2 tbsp spring onion or green onion โ chopped

2 tbsp fresh coriander or parsley โ chopped

2 tbsp all-purpose flour or breadcrumbs
-
1 egg (optional โ helps binding)

2 garlic cloves โ minced

ยฝ tsp black pepper
-
ยฝ tsp salt (or to taste)

ยฝ tsp chili flakes (optional)

Oil for shallow frying

Grate zucchini & carrot โ squeeze out excess water well.

In a bowl, mix mashed potatoes, vegetables, herbs & garlic.

Add flour/breadcrumbs and egg (if using).

Season with salt, pepper & chili flakes.

Form small balls then flatten into patties.

Heat oil in pan on medium heat.

Fry patties 3โ4 minutes per side until golden and crispy.

Serve hot with ketchup, garlic sauce, or yogurt dip.
