Pasta

  • 2 cups elbow macaroni
  • Water + salt (for boiling)

Veggies & add-ins

  • 1 cup cherry tomatoes, halved
  • ½ cup red onion, finely diced
  • ½ cup bell pepper, diced (any color)
  • ¼ cup fresh parsley, chopped
  • ½ cup cucumber, diced (optional)

Dressing

  • ¾ cup mayonnaise
  • 2 tbsp sour cream (or Greek yogurt)
  • 1 tbsp yellow mustard
  • 1 tbsp apple cider vinegar
  • 1 tsp sugar (optional)
  • ½ tsp black pepper
  • Salt to taste

👩‍🍳 Instructions

1. Cook the pasta

  • Boil macaroni in salted water until al dente
  • Drain and rinse under cold water (stops cooking)
  • Let it cool completely

2. Prep ingredients

  • Chop all veggies while pasta cools

3. Make the dressing

  • In a bowl, mix mayo, sour cream, mustard, vinegar, sugar, salt, and pepper

4. Combine

  • In a large bowl, add pasta + veggies

5. Chill
