4 cups potatoes (peeled & diced)

1 cup cooked ham (diced)

3 cups chicken broth

2 tbsp butter

3 tbsp all-purpose flour

2 cups milk (or half & half for richer soup)

Β½ tsp salt (adjust to taste)

Β½ tsp black pepper

Β½ tsp dried thyme (optional)

1 cup shredded cheddar cheese (optional but delicious)

Step 1: Cook Potatoes

In a large pot, add potatoes, onion, garlic, and chicken broth.

Bring to a boil, then reduce heat and simmer 12β15 minutes until potatoes are tender.
Step 2: Make Cream Base

In a separate pan, melt butter over medium heat.

Stir in flour and cook 1β2 minutes (do not brown).

Slowly whisk in milk until smooth and thick.
Step 3: Combine

Pour the creamy mixture into the potato pot.

Add diced ham, salt, pepper, and thyme.
