🧾 Ingredients

For the cabbage base:

  • 1 medium green cabbage (shredded)
  • 1 small onion (finely chopped)
  • 3 tbsp butter
  • 2 cloves garlic (minced)
  • 1 tsp sugar
  • 2 tbsp vinegar
  • 1 tsp caraway seeds (optional)
  • 1 cup broth
  • Salt & pepper to taste

For the dumplings:

  • 2 cups mashed potatoes (cooled)
  • 1 cup flour
  • 1 egg
  • 1 tsp salt
  • Pinch nutmeg

For the creamy sauce:

  • 2 tbsp butter
  • 2 tbsp flour
  • 2 cups milk
  • 1 cup heavy cream
  • 1½ cups shredded cheese (Swiss, mozzarella, or Gruyère)
  • Salt & pepper

👨‍🍳 Instructions

1. Cook the cabbage

  1. Melt butter in a large pan.
  2. Sauté onion until soft, then add garlic.
  3. Stir in sugar and let it lightly caramelize.
  4. Add cabbage, vinegar, caraway seeds, salt & pepper.
  5. Pour in broth, cover, and simmer 25–30 minutes until tender.

2. Make the dumplings

  1. Mix mashed potatoes, flour, egg, salt, and nutmeg.
  2. Form into small dumplings.
  3. Boil in salted water for 10–12 minutes until they float.
  4. Drain and set aside.

3. Prepare the cheese sauce

  1. Melt butter in a saucepan.
  2. Whisk in flour and cook 1 minute.
  3. Slowly add milk and cream, whisking until smooth.
  4. Stir in cheese until melted and creamy.
  5. Season with salt & pepper.

4. Assemble & bake

  1. Preheat oven to 375°F (190°C).
  2. In a baking dish, layer cabbage and dumplings.
  3. Pour cheese sauce over everything.
  4. Sprinkle extra cheese on top.
  5. Bake 20–25 minutes until bubbly and golden brown.
