Cinnamon Sugar Tear-and-Share Bread
Makes 1 loaf or skillet (perfect for sharing)
Ingredients
Dough

3 cups (375 g) all-purpose flour

2¼ tsp instant yeast (1 packet)

¼ cup (50 g) sugar

¾ cup (180 ml) warm milk

1 egg (room temp)

¼ cup (60 g) butter, melted

½ tsp salt
Cinnamon Sugar Filling

½ cup (100 g) brown sugar

2 tsp cinnamon
-
¼ cup (60 g) butter, very soft
Optional Glaze

1 cup powdered sugar
-
1–2 tbsp milk or cream
-
½ tsp vanilla
Instructions
1. Make the Dough

Mix warm milk, sugar, and yeast → rest 5 minutes until foamy

Add egg, melted butter, salt, and flour
-
Knead until smooth and soft (8–10 min by hand, 5 min mixer)
Dough should be slightly tacky but not sticky.
2. First Rise

Place in greased bowl, cover

Rise 1–1½ hours until doubled
3. Roll & Fill
-
Roll dough into a rectangle (~30×40 cm / 12×16 in)

Spread soft butter evenly
-
Mix cinnamon + brown sugar and sprinkle generously
4. Cut & Stack

Cut dough into strips, then squares
-
Stack 4–6 pieces at a time

Lay stacks upright into a greased loaf pan or round skillet
Messy = good. Rustic = perfect.
5. Second Rise

Cover and rise 30–45 minutes until puffy
6. Bake
-
Bake at 180°C / 350°F for 30–35 minutes

Tent loosely with foil if browning too fast
7. Glaze (Optional but Dangerous)
