🧀 Chicken Bacon Ranch Casserole

Ingredients

  • 2 cups cooked chicken, diced or shredded
    (rotisserie works great)

  • 6 slices bacon, cooked and crumbled

  • 2 cups pasta (rotini, penne, or shells), cooked & drained
    (or swap with potatoes / cauliflower—see variations)

  • 1 cup ranch dressing

  • 1½ cups shredded cheddar cheese

  • 1 cup shredded mozzarella (or Monterey Jack)

  • ½ cup sour cream (optional but extra creamy)

  • 1 tsp garlic powder

  • ½ tsp black pepper

  • Salt to taste

  • Optional toppings:

    • Green onions

    • Extra bacon

    • Extra cheese


Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13 baking dish.

  2. Mix the casserole
    In a large bowl, combine:

    • Chicken

    • Bacon

    • Cooked pasta

    • Ranch dressing

    • Sour cream (if using)

    • Garlic powder, pepper, and salt

    • Half of the cheese

  3. Assemble
    Spread mixture evenly into the baking dish.
    Sprinkle remaining cheese on top.

  4. Bake
    Cover loosely with foil and bake for 20 minutes.
    Remove foil and bake another 10–15 minutes, until bubbly and golden.

  5. Finish & serve
    Let rest 5 minutes. Top with green onions or extra bacon if desired.

  • Low-carb / keto: Swap pasta for steamed cauliflower or broccoli.

  • Spicy ranch: Add diced jalapeños or a drizzle of buffalo sauce.

  • Loaded version: Add corn, peas, or sautéed onions.
