Cheesy Ground Beef, Corn & Mashed Potato Bowl

Cheesy Ground Beef, Corn & Mashed Potato Bowl (Comfort Food Bowl)

This dish is a super easy comfort-food bowl made with mashed potatoes, sweet corn, seasoned ground beef gravy, and melted cheese. It’s filling, cheap, and perfect for quick dinners.

Ingredients

Main

  • 1 lb (450 g) ground beef

  • 1 packet brown gravy mix

  • 1 can (15 oz / 425 g) sweet corn, drained

  • 2 cups shredded cheddar or cheddar blend cheese

  • 4 cups mashed potatoes (homemade or instant)

Optional seasonings

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • Salt and pepper to taste

  • 1 tbsp butter (optional for richer gravy)

Instructions

1. Cook the mashed potatoes

If making homemade:

  1. Peel and chop 4–5 medium potatoes.

  2. Boil in salted water for 15–20 minutes until soft.

  3. Drain and mash with:

    • 2 tbsp butter

    • ½ cup milk

    • salt and pepper

Set aside and keep warm.

(Instant mashed potatoes also work fine.)

2. Cook the ground beef

  1. Heat a skillet over medium heat.

  2. Add the ground beef.

  3. Cook until browned, breaking it apart.

  4. Drain excess grease if needed.

  5. Add garlic powder, onion powder, salt, and pepper.

3. Make the gravy

  1. Prepare the brown gravy mix according to package instructions (usually mix with ~1 cup water).

  2. Pour the gravy into the cooked beef.

  3. Simmer 3–5 minutes until thick and combined.

4. Heat the corn

  • Drain the corn and heat in a small pot or microwave for 1–2 minutes.

5. Assemble the bowl

Layer in this order:

  1. Mashed potatoes (base)

  2. Sweet corn

  3. Beef & gravy mixture

  4. Shredded cheese on top

The heat will melt the cheese, or you can microwave 30 seconds to melt it more.

Optional Add-Ons (Highly Recommended)

You can upgrade it with:

  • Crispy bacon bits

  • Green onions

  • Sour cream

  • Hot sauce

  • Fried onions

Servings: 3–4
Total Time: ~25 minutes

💡 Tip: This is basically a quick version of a KFC Famous Bowl, but homemade and usually tastes even better.
