Cheesy Corn Casserole (Using Jiffy Corn Muffin Mix)

Ingredients

  • 1 box **Jiffy Corn Muffin Mix

  • 1 egg

  • 1/3 cup milk

  • 1 cup shredded cheese (cheddar or mozzarella)

  • 1 cup corn kernels (fresh, frozen, or canned)

  • 1/2 cup sour cream or cream cheese

  • 1/2 cup chopped vegetables (green onions, broccoli, or zucchini)

  • 2 tbsp melted butter

  • 1/2 tsp garlic powder

  • Salt & pepper to taste

Optional:

  • 1/2 cup cooked chicken or bacon

  • 1/4 cup chopped jalapeños for spice 🌶️


Instructions

1. Preheat oven

  • Heat oven to 375°F (190°C).

  • Grease a 9×9 baking dish.


2. Mix the batter

In a bowl combine:

  • corn muffin mix

  • egg

  • milk

  • melted butter

Mix until smooth.


3. Add fillings

Stir in:

  • corn

  • sour cream

  • vegetables

  • half of the shredded cheese

  • garlic powder

  • salt & pepper


4. Assemble

  • Pour mixture into the baking dish.

  • Sprinkle the remaining cheese on top.


5. Bake

Bake for 30–35 minutes until:

  • golden on top

  • center is set

  • cheese is melted and slightly browned.


6. Rest & serve

Let sit 5–10 minutes before cutting.

Serve warm. 🍽️
