Ingredients

For the Filling:

  • 1 ½ cups cooked chicken, shredded or diced

  • 1 cup shredded mozzarella or Swiss cheese

  • ½ cup cream cheese, softened

  • ¼ cup grated Parmesan

  • 1 clove garlic, minced

  • ½ teaspoon onion powder

  • ½ teaspoon Italian seasoning

  • Salt & pepper to taste

For the Dough:

  • 2 refrigerated pie crusts (or 1 sheet puff pastry, thawed)

For Finishing:

  • 1 egg + 1 tablespoon water (egg wash)

  • Optional: sesame seeds or everything bagel seasoning


Instructions

1. Preheat Oven

Preheat to 375°F (190°C). Line a baking sheet with parchment paper.


2. Make the Filling

In a large bowl, mix:

  • Chicken

  • Ham

  • Spinach

  • Mozzarella

  • Cream cheese

  • Parmesan

  • Garlic & seasonings

Stir until evenly combined. The mixture should be creamy but not watery.


3. Prepare the Dough

  • Roll out pie crusts slightly.

  • Cut into 4–5 inch circles (use a bowl or cutter).
    You should get about 8–10 circles total.


4. Fill & Seal

  • Place 2–3 tablespoons filling in the center of each circle.

  • Fold dough over to form a half-moon.

  • Press edges with a fork to seal.

  • Cut a small slit in the top for steam.


5. Brush & Bake

  • Brush tops with egg wash.

  • Sprinkle with seasoning if desired.

  • Bake for 18–25 minutes, until golden brown.

Let cool 5–10 minutes before serving.


Make-Ahead & Storage

  • Refrigerate up to 3 days

  • Freeze unbaked pies and bake straight from frozen (add 5–7 minutes)

  • Reheat in oven or air fryer for best crispiness


Optional Add-Ins

  • Sautéed mushrooms

  • Red pepper flakes for heat

  • Swap ham for bacon
