🥐 Cheesy Beef Puff Pastry Pockets

📝 Ingredients (Makes 8–10 pockets)

Filling:

  • 1 lb (450g) ground beef

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • ½ tsp salt

  • ½ tsp black pepper

  • 1 tsp paprika

  • ½ tsp dried oregano (optional)

  • 2 tbsp ketchup or tomato paste

  • ½ cup chopped green onions

  • 1 cup shredded mozzarella

  • ½ cup shredded cheddar

Pastry:

  • 1 package puff pastry sheets (2 sheets), thawed

  • 1 egg (for egg wash)

  • 1 tbsp milk


👩‍🍳 Instructions

1️⃣ Cook the Filling

  1. Heat a skillet over medium heat.

  2. Add ground beef and cook until browned.

  3. Add chopped onion and cook 2–3 minutes.

  4. Stir in garlic, salt, pepper, paprika, oregano.

  5. Add ketchup or tomato paste.

  6. Cook until mixture is thick and no liquid remains.

  7. Turn off heat and let cool slightly.

  8. Stir in green onions and cheese.

👉 Important: Let filling cool so pastry stays flaky.


2️⃣ Prepare the Pastry

  1. Preheat oven to 400°F (200°C).

  2. Line a baking sheet with parchment paper.

  3. Roll out puff pastry slightly.

  4. Cut into rectangles (about 4×5 inches).


3️⃣ Fill & Fold

  1. Place 2–3 tablespoons of filling in center.

  2. Fold pastry over to make a rectangle.

  3. Press edges with a fork to seal.

  4. Cut small slits on top for steam.


4️⃣ Egg Wash

  • Beat egg with 1 tbsp milk.

  • Brush tops generously.


5️⃣ Bake

  • Bake for 18–22 minutes until deep golden brown and puffed.

  • Broil 1–2 minutes for extra browning (watch closely).


🔥 Optional Add-Ons

  • Add diced jalapeños for spice

  • Add sautéed mushrooms or bell peppers

  • Sprinkle sesame seeds on top before baking

  • Swap beef for ground chicken or sausage
