Cheesy Beef and Potatoes Skillet

Ingredients

  • 1 lb ground beef

  • 3–4 potatoes, peeled and diced small

  • 1 tbsp oil or butter

  • 1 tsp salt (to taste)

  • ½ tsp black pepper

  • 1 tsp garlic powder

  • 1 tsp paprika

  • ½ tsp Italian seasoning or dried parsley

  • 1 cup shredded cheese (mozzarella, Monterey Jack, or cheddar)

  • Optional: 2–3 tbsp water or beef broth


Instructions

  1. Cook the potatoes
    Heat oil in a large skillet over medium heat.
    Add diced potatoes, season with salt and pepper, and cook 10–12 minutes, stirring occasionally, until golden and mostly tender.
    (Add a splash of water and cover for a few minutes if needed.)

  2. Brown the beef
    Push potatoes to the side. Add ground beef to the skillet.
    Break it up and cook until browned. Drain excess fat if needed.

  3. Season everything
    Stir potatoes and beef together.
    Add garlic powder, paprika, and Italian seasoning. Taste and adjust salt.

  4. Add cheese
    Sprinkle cheese evenly over the top.
    Cover skillet and cook on low 2–3 minutes until melted.

  5. Serve hot
    Finish with a little parsley or black pepper if you like.


Tips & Variations

  • Extra crispy: don’t stir potatoes too often

  • More flavor: add diced onion or a splash of Worcestershire

  • Spicy: add chili flakes or smoked paprika

  • Creamy: stir in a spoon of sour cream before adding cheese
