🧁 Ingredients

Cake Layers (8-inch, 2 layers)

  • 1½ cups (300g) sugar

  • 4 egg whites (room temp)

Blueberry Filling

  • 2 cups fresh or frozen blueberries

  • ⅓ cup sugar

  • 1 tbsp lemon juice

  • 1 tbsp cornstarch + 1 tbsp water (slurry)


Cloud Frosting (Stabilized Whipped Cream)

  • 2 cups cold heavy whipping cream

  • ¾ cup powdered sugar

  • 1 tsp vanilla

  • 1 tbsp cornstarch (optional, for extra stability)

1️⃣ Make the Blueberry Filling

  1. In a saucepan, combine blueberries, sugar, and lemon juice.

  2. Cook over medium heat until berries burst (5–7 minutes).

  3. Stir in cornstarch slurry.

  4. Simmer until thickened (2–3 minutes).

  5. Cool completely (chill for faster results).


2️⃣ Bake the Cake

  1. Preheat oven to 350°F (175°C). Grease & line two 8-inch pans.

  2. Whisk flour, baking powder, salt.

  3. Cream butter and sugar until light and fluffy (3–4 minutes).

  4. Add egg whites one at a time.

  5. Mix in vanilla.

  6. Alternate adding dry ingredients and milk (begin & end with dry).

  7. Divide batter evenly.

  8. Bake 22–28 minutes until toothpick comes out clean.

  9. Cool completely before assembling.


3️⃣ Make Cloud Frosting

  1. Beat cold cream until soft peaks form.

  2. Add powdered sugar, vanilla, and cornstarch.

  3. Beat until stiff peaks (don’t overwhip).


4️⃣ Assemble

  1. Place first cake layer on plate.

  2. Spread blueberry filling (leave ½ inch border).

  3. Add a thick layer of whipped cream.

  4. Place second cake layer on top.

  5. Frost entire cake with remaining whipped cream.

  6. Decorate with fresh blueberries.

Chill at least 1 hour before serving.
