Banana Bread

🍌 Banana Bread

Ingredients

  • 3 very ripe bananas, mashed

  • ½ cup (115 g) unsalted butter, melted

  • ¾ cup (150 g) brown sugar (white works too, but brown = richer)

  • 1 large egg

  • 1 tsp vanilla extract

  • 1 tsp baking soda

  • ½ tsp salt

  • 1 tsp cinnamon (optional but highly recommended)

  • 1½ cups (190 g) all-purpose flour

Optional add-ins:
Walnuts, pecans, chocolate chips — about ½ cup


Instructions

  1. Preheat oven to 350°F (175°C). Grease or line a loaf pan.

  2. In a large bowl, mix mashed bananas and melted butter.

  3. Stir in sugar, egg, and vanilla until smooth.

  4. Sprinkle baking soda, salt, and cinnamon over the batter and mix in.

  5. Gently fold in flour until just combined (don’t overmix).

  6. Fold in any add-ins if using.

  7. Pour into loaf pan and bake 50–60 minutes, until a toothpick comes out mostly clean.

  8. Cool completely before icing (important unless you want a cream cheese slip-n-slide).

Ingredients

  • 4 oz (115 g) cream cheese, softened

  • 2 tbsp unsalted butter, softened

  • ¾–1 cup powdered sugar (to taste)

  • ½ tsp vanilla extract

  • 1–2 tbsp milk or cream (for spreadable consistency)

Instructions

  1. Beat cream cheese and butter until smooth and fluffy.

  2. Mix in powdered sugar and vanilla.

  3. Add milk a little at a time until creamy and spreadable.

  4. Slather generously over cooled banana bread.
