Bacon, Egg & Cheese Sandwiches

🥓🍳🧀 Bacon, Egg & Cheese Sandwiches

Makes 2 sandwiches

Ingredients

  • 4 slices bacon

  • 2 large eggs

  • 2 slices cheese

    • American (classic melt), cheddar, or Swiss

  • 2 sandwich rolls, brioche buns, bagels, or English muffins

  • Butter (for toasting)

  • Salt & black pepper

Optional extras:
Hot sauce, ketchup, mayo, avocado, caramelized onions

Instructions

  1. Cook the bacon

    • Cook bacon in a skillet over medium heat until crispy.

    • Transfer to paper towels. Keep a little bacon fat in the pan.

  2. Toast the bread

    • Butter cut sides of bread.

    • Toast in the skillet (or toaster) until golden. Set aside.

  3. Cook the eggs

    • Lower heat to medium-low.

    • Crack eggs into the pan.

    • Season with salt & pepper.

    • For runny yolks: cook sunny-side up or over-easy.

    • For a sandwich-friendly egg: break yolk and cook flat.

  4. Add cheese

    • Place cheese directly on the hot eggs.

    • Cover pan briefly to melt (30–60 seconds).

  5. Assemble

    • Bread → egg + melted cheese → bacon → extras → top bread.

    • Press gently. Devour immediately.

🔥 Pro Tips

  • Best melt: American cheese = unbeatable goo factor.

  • Diner style: Scramble eggs low and slow with a splash of milk.

  • Extra indulgent: Spread a little mayo on the toasted bread and add hot sauce.

If you want a meal-prep version, oven-baked eggs for a crowd, or a fast food–style wrapped sandwich, say the word 😏
