Apple Pie Enchiladas

Apple Pie Enchiladas

Apple Pie Enchiladas are a delicious dessert made by wrapping sweet cinnamon apples inside tortillas, baking them in a buttery cinnamon syrup, and creating a soft, caramel-like sauce. They taste like a mix of apple pie and cinnamon rolls. 🍎✨

🥣 Ingredients

Apple Filling

  • 2 cans (21 oz each) apple pie filling

  • 1 teaspoon ground cinnamon

Enchiladas

  • 6 large flour tortillas

  • ½ cup unsalted butter

Sweet Cinnamon Sauce

  • 1 cup granulated sugar

  • 1 cup brown sugar

  • 1 cup water

  • 1 teaspoon vanilla extract

👩‍🍳 Instructions

1️⃣ Preheat Oven

  • Preheat oven to 350°F (175°C).

  • Lightly grease a 9×13-inch baking dish.

2️⃣ Prepare the Apple Filling

  • In a bowl mix apple pie filling with cinnamon.

  • If apple slices are large, chop them slightly.

3️⃣ Fill the Tortillas

  1. Spoon about ⅓–½ cup apple filling down the center of each tortilla.

  2. Roll up like a burrito.

  3. Place seam-side down in the baking dish.

4️⃣ Make the Cinnamon Syrup

In a saucepan combine:

  • butter

  • white sugar

  • brown sugar

  • water

Bring to a boil, then simmer for 3 minutes.
Remove from heat and stir in vanilla.

5️⃣ Pour the Sauce

  • Pour the syrup evenly over the enchiladas.

  • Let them sit 5 minutes so tortillas absorb some sauce.

6️⃣ Bake

  • Bake for 35–40 minutes until golden and bubbly.
