📝 Ingredients (Makes 9–12 bars)

🍏 Apple Filling

  • 3 cups apples, peeled & diced (about 3 medium apples – Granny Smith or Honeycrisp)

  • 2 tablespoons granulated sugar

  • 1 tablespoon brown sugar

  • 1 teaspoon cinnamon

  • 1 tablespoon lemon juice

  • 1 tablespoon cornstarch

🥣 Oat Crust & Crumble

  • 1 cup old-fashioned rolled oats

  • 1 cup all-purpose flour

  • ½ cup brown sugar (packed)

  • ¼ cup granulated sugar

  • ½ teaspoon baking soda

  • ½ teaspoon cinnamon

  • ¼ teaspoon salt

  • ½ cup (1 stick) unsalted butter, melted

  • 1 teaspoon vanilla extract

🍯 Optional Glaze

  • ½ cup powdered sugar

  • 1–2 tablespoons milk

  • ¼ teaspoon vanilla


🔥 Instructions

1️⃣ Preheat & Prep

Preheat oven to 350°F (175°C).
Line an 8×8-inch baking pan with parchment paper.


2️⃣ Make Apple Filling

In a bowl, mix:

  • Diced apples

  • Sugars

  • Cinnamon

  • Lemon juice

  • Cornstarch

Stir until evenly coated. Set aside.


3️⃣ Make Crust & Crumble

In a large bowl, combine:

  • Oats

  • Flour

  • Brown sugar

  • Granulated sugar

  • Baking soda

  • Cinnamon

  • Salt

Stir in melted butter and vanilla until crumbly.


4️⃣ Assemble

  • Press ⅔ of the oat mixture firmly into the bottom of the pan.

  • Spread apple filling evenly over crust.

  • Sprinkle remaining oat mixture on top.


5️⃣ Bake

Bake for 35–40 minutes, or until top is golden brown and apples are tender.


6️⃣ Cool Completely

Let cool at least 1 hour before slicing (this helps them set).


7️⃣ Optional Glaze

Whisk glaze ingredients and drizzle over cooled bars.
