Crockpot Cowboy Soup (hearty & thick)

Ingredients

  • 1 lb ground beef (or ground turkey)

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 3 cups beef broth

  • 1 can diced tomatoes (14–15 oz)

  • 1 can corn, drained

  • 1 can pinto beans, drained & rinsed

  • 1 can kidney beans, drained & rinsed

  • 1 cup potatoes, diced (or frozen diced hash browns)

  • 1 cup carrots, diced

  • 1 tbsp tomato paste (optional but recommended)

  • 1½ tsp chili powder

  • 1 tsp cumin

  • 1 tsp paprika

  • ½ tsp salt

  • ½ tsp black pepper

  • Optional heat: pinch of cayenne or diced jalapeño


Instructions

  1. Brown the beef
    In a skillet, cook ground beef with onion until browned. Drain excess grease. Add garlic and cook 30 seconds.

  2. Load the crockpot
    Add beef mixture and all remaining ingredients to the slow cooker. Stir well.

  3. Cook

    • LOW: 6–8 hours

    • HIGH: 3–4 hours
      Until potatoes and carrots are tender.

  4. Finish
    Taste and adjust seasoning. Let sit 10 minutes to thicken before serving.


Optional Cowboy Upgrades 🤌

  • Stir in ½ cup shredded cheddar before serving

  • Top with crushed tortilla chips, sour cream, or green onions

  • Add Rotel instead of plain tomatoes for extra kick

  • Want it extra thick? Mash some potatoes right in the pot
