Fried Alligator (Southern-Style)
Ingredients

1 lb alligator tail meat, cut into bite-size nuggets

1 cup buttermilk (or milk)

1 tsp hot sauce (optional)
Breading

1 cup all-purpose flour

½ cup cornmeal
-
1 tsp salt
-
½ tsp black pepper

½ tsp paprika
-
½ tsp garlic powder
-
¼ tsp cayenne (optional)
For Frying

Vegetable or peanut oil
Instructions
1. Tenderize & Soak

Place gator meat in buttermilk + hot sauce.

Soak 30–60 minutes (important—keeps it tender).
2. Heat Oil

Heat oil to 350°F (175°C) in a deep skillet or fryer.
3. Bread
-
Mix all breading ingredients.

Remove gator from buttermilk, let excess drip off.

Dredge well in flour mixture.
4. Fry

Fry in small batches 2–3 minutes, turning once.

Golden brown and floating = done.

Don’t overcook or it gets chewy.
5. Drain & Season

Drain on paper towels.
