Creamy Cafeteria Noodles 🍜

Ingredients (serves 4)

12 oz egg noodles

2 tbsp butter

2 tbsp all-purpose flour

1½ cups milk (whole is best)

½ cup heavy cream (optional, but very cafeteria)

½ cup grated Parmesan (or American cheese for extra nostalgia)

½ tsp garlic powder

Salt & black pepper, to taste

Optional: parsley, peas, or shredded chicken
How to Make It

Boil the noodles
Cook egg noodles in well-salted water until tender. Drain and set aside. -
Make the creamy base
Melt butter in a large skillet over medium heat. Whisk in flour and cook 1 minute (no browning). -
Add milk & cream
Slowly whisk in milk (and cream if using). Keep whisking until smooth and thickened, 3–5 minutes. -
Cheese time
Stir in Parmesan, garlic powder, salt, and pepper until melted and silky. -
Combine
Add noodles to the sauce and gently toss until fully coated. -
Serve warm
Finish with parsley or a crack of black pepper if you’re feeling fancy.
