Honey Garlic Potatoes (Slow Cooker / Crockpot)

Ingredients

  • 1 kg baby potatoes or regular potatoes (cubed, skin on)

  • ¼ cup honey

  • 3–4 tbsp melted butter or olive oil

  • 4–5 garlic cloves (minced)

  • 1 tsp salt

  • ½ tsp black pepper

  • ½ tsp chilli flakes (optional)

  • ½ tsp dried thyme or oregano (optional)

  • 1 tbsp soy sauce (optional, adds depth)

  • Fresh parsley (for garnish)

Method

1️⃣ Prep potatoes

  • Wash well and cut into equal-sized cubes.

  • No need to boil.

2️⃣ Make honey garlic sauce

  • Mix honey, melted butter/oil, garlic, salt, pepper, chilli flakes, herbs, and soy sauce (if using).

3️⃣ Slow cook

  • Add potatoes to slow cooker.

  • Pour sauce over and toss to coat.

  • Cover and cook:

    • Low: 5–6 hours

    • High: 2½–3 hours

  • Stir once halfway if possible.

4️⃣ Finish

  • Taste and adjust salt.

  • Garnish with parsley.

  • Serve hot 😋

Optional Crispy Finish 🔥

  • After slow cooking, spread potatoes on a tray.

  • Broil / air-fry at 200°C (400°F) for 8–10 minutes until edges are golden.

Variations

  • Cheesy: sprinkle parmesan before serving

  • Spicy: add 1 tsp hot sauce

  • Vegan: use olive oil instead of butter
