Ingredients

  • ½ cup fresh strawberries, finely chopped or puréed

  • ¾ cup granulated sugar

  • ¼ cup water

  • 2 egg whites, room temperature

  • ¼ tsp cream of tartar

  • 1 tsp vanilla extract

  • Pinch of salt

  • Optional: 1–2 drops pink food coloring


Instructions

  1. Cook the strawberry syrup
    In a small saucepan, combine strawberries, sugar, and water.
    Simmer 5–7 minutes until strawberries soften and mixture thickens slightly.
    Strain if you want it smooth. Cool to warm (not hot).

  2. Whip egg whites
    Beat egg whites with cream of tartar and salt until soft peaks form.

  3. Stream in strawberry syrup
    With mixer running on medium-high, slowly drizzle warm syrup into egg whites.

  4. Whip to fluff perfection
    Continue beating 5–7 minutes until thick, glossy, and fluffy.

  5. Finish
    Beat in vanilla and food coloring if using.
