Homemade Strawberry Marshmallow Fluff
Ingredients

½ cup fresh strawberries, finely chopped or puréed

¾ cup granulated sugar

¼ cup water

2 egg whites, room temperature

¼ tsp cream of tartar

1 tsp vanilla extract

Pinch of salt

Optional: 1–2 drops pink food coloring
Instructions

Cook the strawberry syrup
In a small saucepan, combine strawberries, sugar, and water.
Simmer 5–7 minutes until strawberries soften and mixture thickens slightly.
Strain if you want it smooth. Cool to warm (not hot). -
Whip egg whites
Beat egg whites with cream of tartar and salt until soft peaks form. -
Stream in strawberry syrup
With mixer running on medium-high, slowly drizzle warm syrup into egg whites. -
Whip to fluff perfection
Continue beating 5–7 minutes until thick, glossy, and fluffy. -
Finish
Beat in vanilla and food coloring if using.
