Ingredients (6–8 slices)

  • 4 large eggs, separated

  • 3 oz cream cheese, softened
    (or mascarpone for extra fluff)

  • ½ tsp cream of tartar (key for lift)

  • ½ tsp salt

  • Optional: ½ tsp baking powder (extra rise)


Instructions

  1. Preheat oven to 300°F (150°C).
    Line a baking sheet with parchment.

  2. Whip egg whites with cream of tartar until stiff peaks form.

  3. Mix yolks + cream cheese + salt until smooth.

  4. Fold whites into yolk mixture gently in 3 batches (don’t deflate).

  5. Shape
    Spoon into bread rounds or a small loaf shape.

  6. Bake
    25–30 minutes until lightly golden and set.

  7. Cool completely before slicing (structure firms up).
